Vancouver's landmark dining establishment (now run by Chef Daniel Boulud) recently underwent a major visual tansformation.  Inside these famed walls have walked some of Vancouver's top young chefs.  You could say that Lumiere and it's creative spirit for fine cuisine and the freshest of ingredients helped to transform Vancouver dining into what it is today. 

These days, the talent behind the knife at this institution of fine dining is Dale MacKay, a young and talented chef with an impressive career.  Dale developed as a protege at Gordon Ramsay's Hell's Kitchen in New York as well as his famed restaurant at Claridge's in London.  Today, he takes the finest of seasonal and quality BC ingredients and prepares them with the care and devotion only one of Daniel Boulud's restaurants can deliver.
