What is your recipe for perfect Strawberry Jam?


This is Gremolata's Discussion Topic of the Day for June 26, 2009.

We received a special request to solicit recipes from fellow Gremolata family members for Strawberry Jam. Strawberries are starting to appear in farmers' markets across the city and everyone is into making jam. What is your secret recipe? Share it here!

My current favourite is a strawberry compote made with rhubarb. A few stalks, chopped into a pot with a couple handfuls of strawberries, about a half cup of sugar (or to suit your taste) and a spoonful of orange juice concentrate straight from the freezer. Bring to a simmer and cook until it breaks down and resembles a sort of runny jam that isn’t as jammy-sweet as jam, but stands in for it just as well on bagels and toast, making either reminiscent of strawberry-rhubarb pie.

I make a fairly standard cooked strawberry jam recipe (12 cups crushed strawberries; 4 cups sugar) but during the simmering stage add a split vanilla pod and the scraped-out seeds. The vanilla flavour is subtle but just perceptible enough to give regular strawberry jam an interesting twist. This year I made a batch that wasn't cooked all the way to the setting point so that the jam would be more syrupy and pourable onto ice cream.
