Overview

This weeklong program covering kitchen fundamentals and is designed to teach the tricks of the trade, and students are guaranteed to leave with more than a few industry tricks under their toque. Led by industry veteran and professional instructor Walter Messiah, the curriculum focuses on kitchen fundamentals and building a culinary foundation. Instruction includes the basics of crafting stocks and sauces, essential knife skills, meat and butchery, preparing and cleaning fish and shellfish, working with grains and vegetables, and the art of desserts and pastries. On the final day, students will be tested with a Black Box style challenge that will have them crafting a three-course menu from a box of mystery ingredients. Space is 16 students. Courses run throughout the summer and early fall. This event will be held at The Dirty Apron Cooking School. Cost: $975.00 (all-inclusive and includes meals throughout each day).
