After 20 years in the publishing industry, what prompted this Carleton University graduate in mass communication & journalism to become a driving force in reviving the artisanal cheese business in Ontario? With courses in cheese technology, food safety, sanitation, food microbiology and the Canadian regulatory environment, Petra Cooper began making cheese in her home in the Winter of 2003. In 2004 she co-founded and Chaired the Ontario Cheese Society and in 2006, after extensive hands-on research, she founded Fifth Town Artisan Cheese Co. The $1.5 million 4,600 sq. ft. facility is Platinum LEED certified reflecting a commitment to sustainable design and operations, respecting the environment in all they do. Opened in June 2008, Fifth Town has won numerous awards for its goat and sheep milk cheeses and green building awards for the building itself. Petra has been recognized by the Government of Canada with an Outstanding Contribution to Agriculture Award for Community Development for Prince Edward/Hastings County.
