Clark is the pastry chef from the French Laundry, and before that she made the cakes at The Wolsely in Piccadilly. You can bet the ladies who lingered for tea cared about their cakes and so does she. These are mostly scrapbook recipes, and easy enough for a beginner baker to tackle. Her Lemon Posset has three ingredients and is one of the most delicious desserts imaginable.
